AB Due to its concentration and its competitiveness, the beer industry
targets its development in areas with rapid economic return.
According to Francois Gendre of Tepral, research center on beer of
the Dannon group, new products account for only 2% of production in
the beer sector. As a result, brewers are content with classic means
of innovation: optimization of processes and traditional genetic
selection for yeast and grains. Brewing barley, the use of genetic
